GARBOLUND IS AN EXPERIENCE UNIVERSE WITH WINE BAR & SHOP - WINERY & WINE CELLAR - BUTTERFLY PATH - ACCOMMODATION & EVENTS
EXPERIENCE THE WINERY GARBOLUND
Garbolund produces pure, natural wines without additives, filtration, or other manipulation. This can be tasted and felt when drinking them.
At the farm, you can enjoy our natural wines in a relaxed atmosphere in the historical and idyllic surroundings, where you can feel as if you are in another time or a slightly different world. Many call the place a little time capsule with a southern atmosphere.
A popular gathering spot is our cozy covered red Machine House. Here, there are games, heat lamps, and candlelight coziness, and it is also where dinner and breakfast for our overnight guests are served at long tables.
Every Saturday during the summer season, our wine bar is open from 3 PM to 6 PM, where guests come from all corners of the country to enjoy a glass of our wines, snacks, coffee/tea, and ice cream in the farm's charming surroundings. All ingredients served are primarily organic and locally produced. Often, there is live acoustic music or other cozy events during the summer. The program can be seen on the website.
THE WINE & THE WINERY
The winery is the heart of the farm. The organic grapes are hand-harvested with the help of volunteers from near and far, who every year in October help bring in the harvest. It is an important and very lovely time. We harvest for a maximum of 3 hours at a time and enjoy coffee, cake, wine, and harvest soup. Anyone can sign up for the harvest via the website.
The grapes are sorted very carefully both during and after harvest and are gently pressed in the Winery. The natural wild yeast cells on the grapes, together with the temperature in the winery, create the basis for spontaneous fermentation. After harvest and fermentation, all wines rest over the winter. Some even for several years, depending on what each wine needs - and has the potential for.
We do not filter the wines but instead carefully rack them several times during the winter to remove yeast, pollen residues, and other impurities. The wines are not added sugar, sulfites, fining agents, or other additives. It is the wild yeast, the sun, the wind, the weather, and the soil and the microflora of the fields that give each batch its own character and flavor.
NATURE AROUND GARBOLUND
At Garbolund, we do our best to care for nature in harmony with agriculture. We cultivate our vineyards and land organically and as gently as possible to support local biodiversity and avoid burdening the climate and ecosystems as much as possible. The butterfly path, the beautiful nature in the area, and the vineyards surround all of Garbolund, and you cannot help but be captivated by the area and nature. The butterfly path is sown exclusively with Danish native wildflower species, established to increase habitats and food sources for butterflies, insects, and small birds, thereby creating greater biodiversity locally and in agriculture. But also for the enjoyment of people. For the same reason, we have also established two small lakes for the benefit of birds and frogs, etc., in the meadow where the cows graze. The path is approximately 1.2 km long, going all the way around the vineyards. We also offer a Picnic wine basket that you can bring and enjoy at one of the beautiful viewpoints over the vineyards, Arresø, and the surrounding landscape.
